These Summer Cocktails are Kosher and Delicious

The long hot days of summer require refreshing cocktails that have the kick to quench your thirst and cool you down. Following are recipes for a few kosher cocktails that will add to any summer event. Or you can simply enjoy one tonight just because you want a taste of some refreshing flavors!

Mocha Madness Cocktail

You can drink the Mocha Madness Cocktail alone as a starter cocktail or pair this chocolate and coffee flavored drink with a light dessert for a wonderful pairing of flavors.

First, fill ice cube trays with strong coffee or espresso and freeze until set, which could take just over 24 hours.

Drizzle a little chocolate syrup into the bottom and the sides of a tall, clear glass.

In a blender, place two coffee flavored ice cubes and one cup of regular ice cubes. Pour about a cup of hot coffee over the ice to make it melt. Add one cup of milk or non-dairy creamer, some sugar to taste, and 1 to 2 ounces of your favorite coffee or coffee flavored liqueur, then blend until slushy.

Pour into your prepared glass, garnish with whipped cream and enjoy!

The Razz-Matazz

18 fresh raspberries

1/4 cup Crème de Cassis

1 bottle Moscato d’Asti, well chilled

6 chilled champagne flutes

Rinse the raspberries, pat them dry and place them in a small bowl. Cover them with Crème de Cassis and let the raspberries macerate (steep) for about 20 to 30 minutes.

Line up six chilled champagne flutes and place three marinated raspberries into each with 1 ½ teaspoons of crème de cassis. Top off each flute with cold Moscato d’Asti. Serve immediately.

A Mint Mojito is the perfect drink to enjoy on a warm summer day. It's refreshing and 100 percent Kosher.

Mint Mojito

20-30 fresh mint leaves, and leaves for garnish

2-3 tablespoons Turbinado sugar

2 cups hot coffee (Drip or pour-over)

Whole milk, to taste

Divide mint and place into two large tumblers. Add sugar, to taste, to each glass and muddle the mint with the sugar until the leaves are lightly crushed and emitting their delightful aroma. Pour coffee over the sugar and mint then top with milk, plenty of ice and a sprig of mint for garnish.

Honeydew Lime Margaritas

Replace your normal margarita recipe with this refreshing summer cocktail!

2 cups chopped honeydew melon

½ cup silver tequila

3 tablespoons fresh lime juice

1 tablespoon orange liqueur

1 teaspoon agave nectar

Coarse sea salt, for garnish (optional)

Lime wedges, for garnish (optional)

Puree the honeydew in a blender until smooth and pour into a large cocktail shaker. Add tequila, lime juice, orange liqueur, agave nectar and a few ice cubes and shake vigorously. Rub rims of two cocktail glasses with lime wedges and dip into coarse salt to coat rim (if you want a salted margarita) and strain the shaker mix into the glass. Ice is optional and will water down the cocktail and dilute its flavor. Garnish with thinly sliced lime or oranges.
